How We Produce Green Coffee at Red Cherry Coffee
Selective Handpicking and Processing of Lamjung Green Coffee Beans
- Collecting Fresh Cherries: Our journey begins with fresh cherries. To achieve consistency, we cultivate our own coffee and partner with neighboring farmers to collect ripe cherries for our Lamjung Green Coffee Beans. As a result, we support local communities while ensuring a steady supply of top-quality beans.
- Selective Handpicking: Next, farmers carefully handpick only the ripest cherries. By doing so, this selective process guarantees that only the best cherries are used to produce Green Coffee Beans. As a result, we maintain flavor consistency and premium quality throughout the entire process.
- Floatation and Sorting: Once picked, the cherries are floated in water to remove low-density, immature, or defective ones. During this stage, the highest-quality cherries are separated for further hand-sorting. This ensures that our Lamjung Green Coffee Beans meet the strictest quality standards.
- Pulping and Fermentation: The selected cherries are pulped to remove their outer skin. Following this, they undergo dry fermentation for about 20 hours until the pH level reaches 4. This process enhances the natural flavor of the coffee beans, preparing them for the next stage.
- Drying: After fermentation, we dry the beans on raised bed farm patios until they achieve a moisture level of 11%. This step is essential for preserving the flavor, aroma, and longevity of the Beans.
Resting and Dry Milling of Lamjung Green Coffee Beans
- Resting Period: Once dried, the parchment coffee is rested for one to two months. During this time, the beans stabilize, allowing their flavors to fully develop. This step is crucial for delivering the best possible version of Green Coffee Beans.
- Dry Milling: After resting, we husk and mechanically grade the beans. Following this, our team hand-sorts the beans three times to eliminate any remaining defects. This meticulous process ensures that only the finest Lamjung Green Coffee Beans make it to market.
- Packing: To preserve freshness, we use a two-layer packaging system:
- Grain-Pro Bags (Inner Layer): Airtight and moisture-proof to maintain flavor.
- Jute Bags (Outer Layer): Durable and sturdy for added protection during transport.
We provide 50 kg standard bags, with 20 kg and 25 kg options available based on customer needs.
